Lua’s Chocolate Walnut Banana Cake


1/3 cup melted butter (substitute with coconut oil for vegan option)

½ cup maple syrup

2 eggs (substitute with flax egg for vegan option)

2 ½ mashed bananas (equal to 1 cup)

1/3 cup milk of choice (we used coconut milk)

1 teaspoon bi carb soda

1 teaspoon vanilla extract

½ teaspoon salt

½ - 1 teaspoon cinnamon

2 cups wholemeal spelt flour

½ cup walnuts chopped

½ cup choc chips (milk or dark)


-               Preheat over to 165 degrees Celsius

-               Prepare cake or loaf tin with butter and flour

-               Place butter and maple in a large bowl and whisk to combine, as egg and continue to whisk until all combined.

-               Add mashed banana, milk and vanilla extract, mix to combine

-               Stir in bi carb soda, salt and cinnamon

-               Gently fold the flour followed by the walnuts and choc chips

-               Pour mixture into prepared tin and place in preheated over

-               Bake for 45min or until golden

-               Remove from oven and let cool for 10mins before transferring to a plate

Enjoy with your choice of butter, thick cream or coconut ice-cream.
